Uman Beef (A Yiddish Recipe)

2 Tbs. oil
3 large yellow onions, chopped
2-3 lb. beef cubed to approx. 1”
1-2 bay leaves
1/4 cup soy sauce
1/2 cups walnuts, chopped
2 cups whole cranberry sauce

Heat large heavy pot to medium high. Add oil. When hot, add onions and sauté until golden tan in color. Add beef, soy sauce and bay leaves. Cook at medium high until beef is very tender. Stir frequently to avoid scorching. Lower heat to medium low. Add walnuts and stir. Add cranberries, then stir well. Simmer 5-10 more minutes. Salt and pepper to taste. Remove bay leaves. Serve over rice or mashed potatoes.
